What I ate today, Super Healthy Spaghetti and Meatballs

After a long day of work and not wanting to go to the store for any ingredients, I created this super yummy and super healthy pasta concoction.

Ah, spaghetti and meatballs - a classic Italian dish that's loved by many. But what happens when you're in a bind being really tired and just decide to use some random ingredients lying around in your pantry and cupboards? Well, I made this super healthy and yummy spaghetti and vegan meatballs, of course!

The random ingredients I had were Barilla tri-color rotini pasta, Paul Newman marinara sauce, chopped onion, freshly grated parmesan, fresh basil, and Shroomeats Mushroom Balls as the meat substitute. And let me tell you, this dish was a home run!

Now, I know what you're thinking. "Mushroom Balls? That sounds like something you'd find in a Mario game, not a spaghetti dish." But hear me out - these Shroomeats Mushroom Balls are the real deal. They're the perfect substitute for real meatballs, and they're super healthy to boot.

Because I was in a bind for this meal, my expectations were low. But once I took a bite, I was blown away. It was so good I had to make it again, the exact same way. That's when you know you've struck gold.

But let's break down the ingredients, shall we? First up, we have the Barilla tri-color rotini pasta. Not only is it colorful and fun to look at, but I also like to think it’s a way to get a little extra veggies in. Plus, pasta is always a good idea.

Next, we have the Paul Newman marinara sauce. It's my favorite tomato-based sauce that has a little bit of sweetness and tanginess. 

Then there's the onion. It's a staple in so many dishes, and for good reason. It adds a bit of crunch and flavor to the sauce, and it's also a great source of vitamins and minerals.

And let's not forget about the topping of freshly grated parmesan and fresh basil. It's the perfect toppings with the cheese adding a bit of saltiness and richness and the herb to add some freshness and brightness to the dish. 

And of course, we can't forget about the star of the show - Shroomeats Mushroom Balls. It’s a great meat substitute that's both healthy and delicious. Plus, it’s made from shiitake mushrooms, so you know you're getting all the benefits of this amazing superfood.
