What I ate today, Healthy Plant-Based Deli Sandwich

There’s something about a deli sandwich that’s comforting. But if you don’t eat meat, it’s really hard to find that enjoyment this sandwich brings. So you just have to opt to not have one. But what if I told you that it's possible to eat a delicious and tasty vegan deli sandwich that brings back fond memories in those sandwich shops?

Have you ever had a sandwich so good that it takes you back to your childhood? Well, that's exactly how I felt when I had this healthy plant-based deli sandwich for lunch today. Let me tell you all about it!

 

First things first, I used Shroomeats Mushroom Patties as the "meat" for my sandwich. Finding a tasty and satisfying deli meat substitute can be a challenge, but these mushroom patties did not disappoint. What's great is they don’t have to be cooked, which makes them convenient to use for cold sandwiches or food on-the-go.

 

I lightly toasted two slices of sourdough bread and added fresh lettuce and tomato slices on top of one slice of the bread. Of course, no deli sandwich is complete without some cheese. And let's be real, what's a deli sandwich without mayo and mustard? 

 

To finish creating this deli-style meal, I had to have a side of potato chips to complete it. The salty crunchiness of the chips paired perfectly with the sandwich and brought back memories of picnics I used to have with my family when I was younger.

 

All in all, this healthy plant-based deli sandwich was quick and easy to make, yet packed with flavor and nostalgia. It reminded me of the simple pleasures in life and the importance of taking a moment to enjoy a good sandwich.
