Very Veggie Quesadilla with Mushroom Shred-it

Quesadillas can be the easiest and yummiest of meals to make. But what if you want a "healthier" version with a twist?

 

 

 

Servings: 2-4

Prep Time: 5-10 minutes

Cook Time: 10-15 minutes


Ingredients:

½ box Shroomeats Mushroom Shred-It (refrigerate the remaining)

2 tbsp olive oil

¼ cup diced white onion

¼ cup diced carrots

¼ cup diced broccoli 

½ cup tomato sauce

⅓ cup mozzarella cheese of your choice

2 flour tortillas


Instructions:

  1. In a pan on medium heat add oil to saute onions, carrots, and broccoli for 3-5 minutes or until soft.
  2. Add Mushroom Shred-It and tomato sauce, mix well, and heat for 3-5 minutes. Remove from pan and set aside. 
  3. Using a paper towel briskly clean the pan surface and heat again on medium. Add one tortilla, add the filling, sprinkle cheese, and place the second tortilla on top.
  4. Warm for 1-2 minutes, flip and repeat on the other side.
  5. Remove from pan and cut to enjoy!
