Vegan Meatloaf using Mushroom Shred-It

A twist on a classic dish - meatloaf. Let's make it vegan using Mushroom Shred-It.

 

Serving size: 4-6

Prep time: 15-20 minutes

Cook time: 30-45 minutes

 

Ingredients:

2 boxes Shroomeats Mushroom Shred-It

2 garlic cloves

½ onion chopped

½ carrot diced

3 tbsp ketchup

3 tbsp Worcestershire sauce

2 vegan eggs

¾ cup bread crumbs

2 tbsp cornstarch 

2-4 tbsp fresh parsley chopped for garnish

 

Glaze:

3 tbsp BBQ sauce

2 tbsp ketchup

1 tbsp balsamic vinegar

 

Instructions:

  1. Preheat oven to 350 F.
  2. Add all ingredients to a bowl and mix well. For the glaze, add the ingredients, mix well, and set aside.
  3. Place the mixture onto a baking sheet creating a loaf or in a loaf pan. Drizzle glaze on top
  4. Bake for 20-30 minutes or until the crust browns.
  5. Remove from oven and gently slice and serve with your favorite sides and garnish with fresh parsley.
