Servings: 4-6

Prep Time: 15-20 minutes

Cook Time: 30-45 minutes

You’ll need:

For the filling

  • 1 box Shroomeats Mushroom Shred-It
  • ½ cup diced white onion
  • ½ cup chopped carrots
  • 1 cup chopped broccoli
  • 2-3 garlic cloves finely chopped
  • 2 tbsp tomato paste
  • 1 ½ tbsp Worcestershire sauce
  • ⅓ cup chives, chopped

For the potato topping

  • 4-6 white potatoes, skin removed and cubed
  • 8 tablespoons unsalted preferred butter -1 stick
  • 1/3 cup oat milk or your preferred milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup preferred parmesan cheese, grated

Let’s get cooking:

  1. Preheat oven to 350 F. Then bring a pot of water to a rolling boil and cook the potatoes until fork tender. This will take time, meanwhile continue on to the next step.
  2. Heat pan on medium to high, add oil, Mushroom Shred-It, salt and pepper, and brown for 4-6 minutes.
  3. Add onions, carrots, garlic, and tomato paste, mix well and let cook for 1 minute.
  4. Add Worcestershire sauce and broccoli, mix well until all ingredients are coated in sauce
  5. Using an oven-safe dish, add mixture as base layer.
  6. Finish the potatoes but adding milk, butter, chives, salt and pepper. Using a masher to get as many clumps out of the potatoes as possible. Add as the top layer in the oven-safe dish.
  7. Bake for 15-20 mins, or until the potatoes are golden brown and remove.
  8. This dish will be hot, so be careful on your first bite. Enjoy!
