Power Protein Omelet with Mushroom Shred-It

Get your day started with a protein-packed breakfast and watch yourself conquer the day!

 

 

Servings: 1-2

Prep Time: 5-10 minutes

Cook Time: 10-15 minutes

You’ll need:

  • ½ box Shroomeats Mushroom Shred-It (keep remaining in the fridge)
  • 2-3 big handful of greens - can use spinach, kale, or a spring mix
  • 2 tbsp cooking oil
  • 2 eggs scrambled (or JUST egg for vegan)
  • Salt and pepper to taste

Let’s get cooking:

  1. Heat pan on medium to high, add 1tbsp oil, Mushroom Shred-It, and salt & pepper to brown for 4-6 minutes and set aside. 
  2. Using a towel to wipe the pan, heat 1 tbsp oil on low. Once the oil is warm add egg and cover for 5-7 minutes or until you see the egg start to firm.
  3. Once the eggs have little liquid, add Mushroom Shred-It and your greens, and cover for 2-4 minutes.
  4. With a large silicone spatula, carefully lift the egg around edges to fold in half. Continue to lift the egg from the pan to slide onto your plate.
  5. You have a simple yet delicious and energizing breakfast to get your day started. Enjoy!
