I'm a midwesterner, I grew up eating meat and potatoes. I don't eat meat anymore, but I still fancy the nostalgia of this kind of meal. With this recipe and Shroomeats, I can keep enjoying the meals I loved growing up.

Ingredients:
1 box Shroomeats Mushroom Balls
3 tbsp olive oil
1-2 cloves garlic, minced
2-3 shallots, minced
1 bell pepper, diced (any color you prefer)
2 tomatoes, diced
1-2 gold potatoes, 1” cubed
2 tbsp tomato paste
1 tsp paprika
Salt and pepper to taste
Garnish: 3-4 fresh parsley sprigs
Instructions:
- Add olive oil, minced garlic, and shallots in a pan over medium heat. Sauté for 1-2 minutes or until fragrant.
- Add the bell pepper, tomatoes, and tomato paste, and cook for 3-4 minutes or until the mixture thickens.
- Add the cubed potatoes and Mushroom Balls to the pan and season with salt, pepper, and paprika. Reduce heat to low and cover, simmer for 8-10 minutes or until the potatoes are fork-tender.
- Plate and garnish with parsley and enjoy this easy meal!
