One Pot Meatballs and Potatoes with Mushroom Balls

I'm a midwesterner, I grew up eating meat and potatoes. I don't eat meat anymore, but I still fancy the nostalgia of this kind of meal. With this recipe and Shroomeats, I can keep enjoying the meals I loved growing up.

 

 

Servings: 3-4

Prep Time: 5-7 minutes

Cook Time: 15-20 minutes


Ingredients:

1 box Shroomeats Mushroom Balls
3 tbsp olive oil
1-2 cloves garlic, minced
2-3 shallots, minced
1 bell pepper, diced (any color you prefer)
2 tomatoes, diced
1-2 gold potatoes, 1” cubed
2 tbsp tomato paste
1 tsp paprika
Salt and pepper to taste

Garnish: 3-4 fresh parsley sprigs


Instructions:

  1. Add olive oil, minced garlic, and shallots in a pan over medium heat. Sauté for 1-2 minutes or until fragrant.
  2. Add the bell pepper, tomatoes, and tomato paste, and cook for 3-4 minutes or until the mixture thickens.
  3. Add the cubed potatoes and Mushroom Balls to the pan and season with salt, pepper, and paprika. Reduce heat to low and cover, simmer for 8-10 minutes or until the potatoes are fork-tender.
  4. Plate and garnish with parsley and enjoy this easy meal!
