Glass Noodle Salad with Mushroom Shred-it

Glass Noodle with Mushroom Shred-It



Servings: 4-6

Time: 15-20 minutes



1 Box Shroomeats Mushroom Shred-it

200 g glass noodles (1 package)

2-3 shallots sliced

1-2 carrots sliced

2 garlic cloves chopped

3-4 Thai chilies chopped

3 tbsp soy sauce

3 tbsp vegetable stock

2 tsp coconut sugar



1-2 limes cut into wedges

¼ cup cilantro chopped


  1. Cook the noodles per the package instructions. When finished, set cooked noodles to the side.
  2. In a mixing bowl, add Mushroom Shred-It, sliced shallots, sliced carrots, chopped garlic, chopped chilies, soy sauce, coconut sugar, and vegetable stock. Mix well. *Mushroom Shred-It does not need to be heated.
  3. Add the noodles to the mixing bowl and gently toss ingredients together to not break the noodles. 
  4. Plate and garnish with cilantro and lime wedges.
