Asian Twist Tostada with Mushroom Shred-It

This crunchy, refreshing, umami, and slightly sweet dish is the perfect mid-day snack or fun party appetizer.

 

 

 

Servings: 2-4

Prep Time: 5-10 minutes

Cook Time: 10-15 minutes

You’ll need:

  • 1 box Shroomeats Mushroom Shred-It
  • 2 tbsp taco seasoning 
  • 2 tbsp cooking oil
  • ½ cup frying oil
  • 1 package of rice papers - cut ‘em any size you’d like; small for appetizers, big for the main dish
  • ½ ripe avocado 
  • ⅓ cup diced tomatoes 
  • A handful of cilantro 
  • 2 tbsp teriyaki sauce 

Let’s get cooking:

  1. Heat pan on medium to high, add oil, Mushroom Shred-It, and brown for 4-6 minutes. 
  2. Sprinkle in taco seasoning and sauté for another 2-3 minutes. Set it aside.
  3. In a clean pan, heat oil on medium to high. When oil is hot (be careful!) fry rice papers until crisp then set on a paper towel to absorb extra oil.
  4. To plate, layer Mushroom Shred-It on crispy rice paper tostada, add tomatoes, avocado slices, and fresh cilantro.
  5. Drizzle teriyaki sauce and dig in! Crunch, savor, and enjoy every bite!
